Easy Cheese Danish



  • 4 ounces cream cheese, at room temperature
  • 2 1/2 Tbsp. sugar
  • 1 extra-large egg yolk, at room temperature
  • 1 Tbsp. ricotta cheese
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • Zest of one lemon
  • 2 sheets (1 box) frozen puff pastry, defrosted
  • 1 egg beaten with 1 tablespoon water, for egg wash

    Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
    Place the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment and cream them together until smooth. With the mixer still on low, add the egg yolks, ricotta, vanilla, salt, and lemon zest and mix until just combined.
    Unfold 1 sheet of puff pastry onto a lightly floured board and roll it slightly with a floured rolling pin until it's a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a heaping tablespoon of cheese filling into the middle of each of the 4 squares. Brush the border of each pastry with egg wash and fold 2 opposite corners to the center, brushing and overlapping the corners of each pastry so they firmly stick together. Brush the top of the pastries with egg wash. Place the pastries on the prepared sheet pan. Repeat with the second sheet of puff pastry and refrigerate the filled Danish for 15 minutes.
    Bake the pastries for about 20 minutes, rotating the pan once during baking, until puffed and brown. Serve warm. (My husband actually likes them best at room temperature with a little powdered sugar glaze.)
  • Sweet Muffins



    A recipe my Grandma Teichert gave me years ago while I was learning to make muffins in 4-H. Still just as tasty today as I remember them back then.

    Sweet Muffins

    1 cup brown sugar
    1 egg
    1/2 cup butter
    1 tsp soda dissolved in 1 cup milk
    2 cups flour
    2 tsps vanilla
    pinch of salt (to your preference)
    1/2 cup nuts

    Bake at 350 for 20 minutes.

    Delicious Granola

    Spread 4 cups rolled oats on ungreased sheet cake pan and bake at 350 for 10 minutes.
    Stir in:
    1 cup flaked coconut
    1 cup peanuts, coarsely chopped (any nut will do. I used a combination of almonds and peanuts in this batch, but I have also used cashews)
    3/4 cup wheat germ
    Then add:
    1/2 cup honey
    1/3 cup oil (try to use something that is heart healthy, but light in flavor)
    1 tsp. vanilla
    Mix until dry ingredients are well coated. Bake at 350 for 20-25 minutes, stirring occassionally to brown evenly.
    Stir in: 1 cup dried fruit (I used dried cranberries, but any type of dried fruit will work nicely.)
    Store in an airtight container.

    Mom's Enchiladas


    My mom made these enchiladas for our family as we were growing up and it was a favorite.  When we were little she made them with corn tortillas and then we switched to flour as we got older.  They are good both ways, but I usually prepare them with white corn tortillas.  They are incredibly fast and easy, and I usually have the ingredients on hand, so they are perfect for those busy days where I haven't planned ahead.

    Mom's Enchiladas

    1 pound ground beef
    1/2 medium onion, chopped
    1 can condensed tomato soup
    1 can tomato sauce
    salt and pepper

    Method:  Brown ground beef with onion.  Season with salt and pepper.  Add tomato soup and sauce and heat through.  Layer sauce mixture with tortillas, lettuce, cheese, green onions, sour cream and any other toppings that you like.  (Jeremy likes to top it all off with a fried egg, over easy.)
